Cuban  Pork  Roast

Boneless pork roast, flour and brown slowly in small amount of oil, iron skillet is good to use. Next make slits in top of meat and insert slivers of fresh garlic. Place in slow cooker on top of several slices of onion slices.  Mix one regular can diced tomatoes and one can golden mushroom soup, pour over pork roast, cook on low 8-10 hours,  VERY GOOD

Jack  Horner  Caramel  Apples
This is a softer dip for apples and very tasty.  We eat our caramel apples with a knife and fork, easier.

Six to eight apples washed well with sticks put in six of the apples, if you have dip left put sticks in other two apples.  In a heavy medium size saucepan put in 15oz. condensed milk,  1/2 cup sugar, 1/2 cup light corn syrup and a 1/3 cup packed brown sugar. Cook 234 D. to a soft ball, stir constantly.  Soft ball can be tested when mixture is bubbly by getting half cup of water, drop half tsp. hot mixture in water take fingers and try to form a ball, if candy will not form ball cook longer stirring all the time. Remove from heat and stir in 1 Tbls. butter and 1 1/2 tsp. vanilla.  Quickly dip and twirl apples.  Cool on greased cookie sheet.

Apple-Orange Pie

2 thin skinned oranges                    1 cup water
1/4 cup honey                                1 Tbls. lemon juice
1/2 cup packed brown sugar            3 Tbls. all purpose flour
1/4 tsp. cinnamon                            1/4 tsp. ground ginger
Dash of salt
6 medium Golden Delicious peeled,cored, sliced
2 crust pie recipe or 1 (15oz.package refrigerated pie dough such as Pillsbury)
Cooking spray                                  1 large egg lightly beaten

Carefully remove rind from oranges using sharp vegetable peeler, or paring knife, making sure to avoid white pithy part of rind, use the two oranges for something else.  Cut rinds into 1 x 1/8 inch wide strips.  Combine water, honey and lemon juice in a small saucepan, bring to boil over medium high heat.  Add orange rind, cover, reduce heat and simmer 30 minutes or until soft. Pour off liquid from rinds. Preheat oven to 350 D.  Combine brown sugar, flour, spices, salt in a large bowl.  Add apples, toss well to coat.  Fit 1 portion of dough in a 9 inch deep dish pie plate coated with cooking spray, allowing dough to extend over edge of plate. Spoon half of apple mixture into crust, arrange orange rind over top, spoon in rest of apples.  Place remaining dough on top, press edges of dough together and fold edges under, flute.  Cut 3 one inch slits in top of pie with sharp knife.  Brush the top of pie with the beaten egg.  Place pie on baking sheet bake 350D. for 1 hour,  Cool on a wire rack.  GOOD
