Chicken  Cacciatore

3 pound fryer, cut up, skin removed. Dust chicken with bread crumbs seasoned with dash of oregano Italian seasoning. Place dusted chicken in large layer pyrex dish. In medium saucepan simmer for 15 minutes the following: 

1 can tomato sauce
1 can stewed tomatoes
1 small onion minced
2 Tbl. fresh or dried parsley
1/4 tsp. garlic powder or garlic bud
1/4 tsp. oregano

In a 400 D. oven cook chicken uncovered for 20 minutes, then turn chicken over and cook 20 minutes at 350D.

Add sauce and cover and cook 45 minutes.

Butterscotch  Bars      

350 D.  30-35 minutes - Makes 24 bars

8oz. cream cheese, softened
1 can Eagle Brand milk
1 tsp. vanilla
1 egg
1 pkg. Butterscotch Morsels
1/3  cup butter
2 cups graham cracker crumbs
1 cup chopped nuts

In medium pan melt morsels and butter, stir in crumbs and stir well. Press half of mixture into greased 9 x13 pan or layer dish. Add nuts on top. Beat cream cheese until fluffy, beat in milk, egg and vanilla. Pour over crumbs and nuts, put remaining crumbs on top. 

Bake 25-35 minutes at 350 D. Let cool, then serve.

Yum, Yum Strawberry Pie

Ingredients: Bring to boil 1 cup water, 1 cup sugar, 4 Tbls. strawberry jello, and 2 Tbls. corn starch. Stirring well until dry jello and cornstarch are dissolved, then let cool. 

Mix with mixer 8 oz. cream cheese, 3/4 cup sugar, add 8 oz. of cool whip, mix. 

Put cheese mixture in graham cracker pie crust or baked pie shell. (Chill)
Next slice one cup strawberries in half, put on top of chilled cheese, pour over the glaze and chill for 3-4 hours. Serve with dap of cool whip on top.

Fresh  Strawberry  Freeze

Place 4 cups hulled strawberries and 1 cup sugar in a food processor and puree. Reserve 1 cup. Pour the remaining puree into a large bowl. 

Whip one cup heavy cream in another bowl until peaks form. Gently fold into puree using a rubber spatula until just blended.

Pour into a loaf pan lined with plastic wrap, cover with  plastic wrap, and freeze until firm; about 2 hours. 

Remove plastic wrap, scoop into bowls and garnish with berries and some of the reserved puree drizzled over the top. Serves 6-8
