E-Z Fruit Salad


Small can sliced pineapple, drained and cut in pieces
Small can mandarin oranges, drained and cut in pieces

Mix above with 1/2 cup coconut and 1/2 cup mini marshmallows, stir well. Put in medium, shallow, oblong dish. Spread sour cream over the top. Cover and refrigerate until ready to serve.

I would serve this as a dessert. Can be doubled. Keeps well in fridge for several days. Pour off any water that accumulates.

Fresh Blueberry Sauce


1/4 cup sugar
1-1/2 tsp. cornstarch
1/4 tsp. ground cinnamon
1/8 tsp. ground cloves
1-1/2 cups fresh or frozen blueberries
2 Tbls. fresh or thawed orange juice

In a large saucepan combine the sugar, cornstarch, cinnamon and cloves. Stir in blueberries and orange juice, bring to boil. Cook and stir for 2 minutes or until thickened. Serve on waffles, pancakes or french toast. For larger amount double recipe.

Avocado Dressing (serves 6-8)

2 large, ripe avocados (blended)
1 cup sour cream
1 cup light cream
1 Tbls. grated onion
Dash cayenne or red pepper
1 tsp. salt
2 small cloves garlic, crushed
2 Tbls. lemon juice

Mix all of above ingredients together. Then, pick your choice of lettuce. I like to use 2-3 different kinds, its healthy and looks pretty. Place mixed lettuce in cold bowls, add 2 or more Tbls. of dressing. Top with chopped tomatoes or other salad ingredients that you like.

Remember a salad a day, or raw vegetables, is so good for us.

Chocolate Fudge Cookies (Yum,Yum)  3 dozen 325 D. 15 minutes

2 Tbls. butter
1-1/2 cups chocolate chips
1 (15 oz.) can sweetened, condensed milk
1 cup sifted  flour
1 cup chopped walnuts
1 tsp. vanilla

Grease cookie sheet with margarine. Pour water into bottom of a double boiler, or set smaller pan in large pan of heated water. Put chocolate and butter in top section. When chocolate is melted, take pan off stove. Stir in milk, then add sifted flour and stir. Add nuts and vanilla. Drop spoonful of mixture onto cookie sheet, 2 inches apart.

Place in oven and bake for 15 minutes. Bake just until firm on top, can be a little soft. Cool a minute then carefully remove to rack to cool. These will get soft and are really yummy. When I made this recipe I wanted to make them again the next day, but resisted.
