Reese's Cup Squares

This is very easy to make and good. (No cooking.) 

1 1/2 sticks of butter
1 cup smooth peanut butter
1 pd. box of confectionery sugar
1 - 7oz. Hershey chocolate bar; melted in microwave.

Stir melted butter and peanut butter, add sugar and mix well. Spread into a 9x13 layer dish. Let set for 15 minutes; then, melt chocolate and spread all over the top.

Let set until firm. Yield 40 pieces.

Almond Sand Dollar Cookies

2 sticks of butter, softened
2 cups sifter confectionery sugar
2 large eggs
1 large egg separated
3 1/3 cups all-purpose flour
1/2 tsp. baking powder
1/4 cup sugar
1 tsp. ground cinnamon
Sliced almonds

Beat one cup butter at medium speed with an electric mixer until creamy; gradually add 2 cups sifted conf. sugar, beating until well blended. Add 2 eggs and 1 egg yolk, beating until blended. Combine flour and baking powder; add to butter mixture, beating at low speed until blended. Shape dough into a ball and wrap in plastic wrap, chill for one hour. Roll dough to an 1/8 inch thickness on a lightly floured surface; cut with a 3-inch round cutter. Place on lightly greased parchment paper-lined baking sheets; brush with lightly beaten egg white. Stir together sugar and cinnamon and sprinkle evenly over cookies. Gently press 5 almond slices in a spoke design around center of each cookie. Bake at 350D. for 4 minutes; remove from oven, and gently press almonds into cookies again. Bake 4 more minutes or until edges are lightly browned. Remove cookies to wire rack  and cool.

Chicken and Strawberry Salad

1/2 cup poppy seed dressing
1/4 cup mayonnaise
3 cups chopped, cooked chicken
1 pint fresh strawberries, halved
1 avocado, cut into 1-in. cubes
1/2 small red onion, thinly sliced
1/2 cup slivered almonds, toasted
1 - 10 oz. package mixed  salad greens

Garnish avocado and halved strawberries. Whisk together dressing and mayonnaise in a large bowl; cover and chill 30 minutes. Add chopped chicken, dressing and other ingredients except the avocado and strawberries. Use those as garnish. Makes 6 servings.

Green Bean Salad

1/2 pound small, fresh green beans
1/4 cup olive oil
2 Tbls. rice or white wine vinegar
1 tsp. grated lemon rind
1 tsp. fresh dill, or dried
1/2 tsp. salt
3-4 shakes of pepper
1/2 medium onion, thinly sliced
1 garlic clove 

Cook beans in boiling water and cover 3-5 minutes. Drain and run under water or plunge into ice water to stop the cooking process, drain and set aside. Heat oil and other 5 ingredients in a saucepan over medium heat. Combine beans, onion, and garlic; drizzle with the warmed mixture, stirring to coat. Cover and chill for at least 2-3 hours. Discard garlic clove. Makes 2 cups or so
