Sesame Dill Fish


1/2 cup dry bread crumbs
1/4 cup sesame seeds
1/2 tsp. dill weed
1/4 tsp. salt
3/4 cup plain yogurt
1 pound catfish, or white fish fillets
1/4 cup canola oil

In a shallow bowl, combine bread crumbs, sesame seeds, dill and salt. Place yogurt in another bowl and stir until smooth. Dip fillets in yogurt, shake off any excess, then dip in crumb mixture. Heat oil in large nonstick skillet. Fry fillets over medium heat until brown, then turn over and cook 3-4 minutes longer. May serve with lemon slices and tartar sauce, which can be made with a small amount of mayonnaise and sweet relish. Fish will serve 4 people.

*The thickness of the fish will determine the amount of time needed to cook. Add a few more drops of oil if needed. Tilapia fish is good and very mild.

Smoked Sausage Supper

1/2 pound smoked sausage, sliced
1/3 cup chopped green pepper
1/4 cup chopped onion
1 small garlic clove, minced
1/2 tsp. dried oregano
1/2 tsp. dried basil
1 Tbsp. olive oil
3/4 cup V8 juice
1 1/2 cups hot, cooked rice (Instant rice, or cook 1 cup rice with 2 cups water and simmer for 15 minutes until water is gone.)

In a large skillet, sauté the sausage, green pepper, onion, garlic and seasonings until vegetables are tender. Cover with lid for 5 minutes. After 5 minutes, add V8 juice and cook uncovered for 5 more minutes. Make sure vegetables are cooked enough, then serve on top of rice. Makes 2-3 servings.

Country Pork Chop Dinner

4 thick pork chops
1 small onion, chopped
1-2 Tbsp. canola oil
4 medium red potatoes, cubed
1 cup thinly sliced carrots
1 cup fresh sliced mushrooms (Or 4 1/2 oz jar)
1 can condensed cream of celery soup, undiluted
1/2 cup water
1 tsp. salt
1/2 tsp. dried thyme

In a large skillet, cook pork and onion in oil until meat is browned. Drain any excess oil (may need to add more later). Top with potatoes, carrots and mushrooms. Combine the soup, water, salt and thyme; pour over vegetables. Bring to a boil and simmer for 25-35 minutes until meat and vegetables are tender. Yields 4 servings.
