Easy Hashed Brown Casserole
1 - 16 oz. pkg. frozen hashed brown potatoes
2 Tbls. melted butter
1 cup sour cream
1 can cream of mushroom soup
1 small onion (or 5-6 slices of onion) minced
4 ozs. Cheddar cheese, grated.
Use 9x13 inch pan or glass baking dish. Yields 6-8 servings. Bake 350D for 45 min.
Let potatoes thaw while getting other ingredients ready. In large bowl place potatoes, butter, sour cream, soup and onion; mix well with large spoon. Put into baking dish or pan. Next, sprinkle with cheddar cheese, or you can put cheese on top in the last few minutes of baking. Heats up well later.
Macaroni Salad (12 servings)
16 ozs. uncooked macaroni (cook following directions)
3 cups or less seedless grapes, cut lengthwise
1 cup chopped celery
1 small jar pimento
1 small green pepper (or half of medium) chopped
3/4 tsp. celery seed
1 cup slivered almonds, toasted
1- 3/4 cup mayonnaise or less, or use part sour cream
1/2 cup sugar
3 Tbls. lemon juice
Optional: 1 or both - 3 pinches of dried dill & ginger.
To toast almonds place in dry skillet and heat for 2-3 minutes stirring once or twice.
Mix together all ingredients, stirring well. Chill for an hour or more. Good and will keep for several days.
Reese's Cup Squares (no cooking required)
3/4 cup melted butter
1 cup peanut butter
1 lb. box of confectionery sugar
1 - 8 oz. Hershey chocolate bar, melted in microwave.
Stir butter and peanut butter. Add sugar and mix well. Spread into a
9x13 layer dish. Let set for 15 minutes. Melt chocolate and spread over top. Let set till firm.
Yields 40 pieces.
