Tomato Pie

One 9 inch baked pie crust in a deep pie dish
3/4 cup grated medium or sharp cheddar cheese
Medium sliced tomatoes
3/4 cup chopped onion

Place ½ of cheese in bottom of pie crust.  Heat oven to 350 D.  Place two stacks of tomato slices with part of onion between, remaining onion on top of tomatoes.  Put remaining cheese on top and bake for 30-35 minutes. If desired make another layer.  Easy and very yummy. Be sure to chop onions. No salt.

New Orleans Style Red Beans and Rice

1 tbls. olive oil
1 large onion chopped
2 ribs celery, chopped with strings taken off
4 garlic cloves minced
4 bay leaves
1 tbls. dried tyme
2 tsp. oregano crumbled
1 tsp. Tabasco sauce
3/4 tsp. garlic powder
1/2 tsp. ground allspice
1/2 tsp. cloves
½ tsp. White pepper
1/2 tsp. fresh ground black pepper
1/4 tsp. cayenne pepper
1 cup chicken broth
3- 15 oz. cans red kidney beans with liquid
14 oz. smoked polish sausage, skinless if desired 

Cut sausage length wise than slice in ¼ inch slices. Sausage mixture placed on cooked rice when ready to serve. (2 cups dry rice plus 4 cups of water, cooked in a large plastic or glass dish in the microwave, or in a pan on the stove.)
Mash or puree 1 cup of beans and set aside. In a large pan on medium heat add the olive oil onion and celery, cook until soft.  Then add everything but the rice, beans, sausage and broth. Stir well then add beans, broth and sausage.  Stir well cover and cook 15 minutes stirring often.  Serve  over warm rice.
Note: There are a lot of spices, but not all that hot.  Rice may be cooked ahead and heated up at time of serving. Remove bay leaves, and enjoy.  Tip:  For leftovers you may want to mix the remaining bean mixture and
all or part of the leftover rice together.  This recipe was tested and we enjoyed it very much. 8 servings.

Pudding Delight

6-8 servings    13" x 9" x 2" baking dish      Bake 350 D for 1 hour

1 quart of milk (4 cups)
1 cup natural wheat & barley cereal (Grape Nuts)
4 eggs beaten
dash of salt
1 cup sugar
1 tsp. vanilla
Nutmeg for top

Warm milk and pour over cereal in bowl soak 15 minutes.  Add beaten eggs, sugar, salt & vanilla. Mix well, pour into baking dish sprinkle nutmeg over top.  Place dish in a larger pan with 1-2 in. hot water in the bottom.  Place in oven and bake for 1 hour. Texture is like a custard, let set some before serving, but good served warm or cold.
