Baking:  Unless otherwise specified, always preheat the oven at least 20 minutes before baking.
Browning:  For best results in browning food in a skillet, dry food first on paper towels.
Measuring: Always measure accurately.  Level dry ingredients with top of a cup, or knife edge or spoon handle.  Measure liquids in cup so that the fluid is level with the top of the measuring line.  Measure solid shortening by packing it firmly.

Skillet  Cabbage

4 cups shredded cabbage
1 green pepper diced
2 cups diced celery
2 large onions sliced
2 tomatoes chopped, or 1 can (16 oz.) stewed tomatoes
¼ cup bacon drippings
2 tsp. granulated sugar
Salt and pepper to taste

In large heated skillet with bacon grease put in cabbage and cover while chopping  pepper, celery and onion.  Stir cabbage then add onion, cover 5 minutes, stir then add celery and  pepper; cook 5 minutes.
Next add tomatoes, sugar, salt and pepper. Cover and cook 20 more minutes, stir well and serve. If not tender enough for you cook another 5-10 minutes.  Serves 6-8

Spinach  Casserole ------- 4-6 servings

2 eggs well beaten
6 tbls. all-purpose flour
1 package (10 oz.)  frozen chopped spinach, thawed.
1 ½ cups cottage cheese
1 ½ cups grated cheddar cheese
½ tsp. Salt

Preheat oven to 350 D.  Grease 1 quart casserole dish. Beat eggs and flour in bowl until smooth.  Stir in spinach, cottage cheese, cheddar cheese, and salt; mix well. Pour into dish, bake 1 hour.

Butterscotch Brownies

2 cups light brown sugar
1 cup margarine or solid shortening
4 eggs
1 tsp. vanilla
½  tsp. orange extract (optional)
2 scant cups all-purpose flour
1 -2 cups semisweet chocolate pieces.

Preheat oven to 350 D. Makes 20 brownies in greased 9x12x2 inch baking pan.
Cream sugar, margarine, then add eggs, and extracts.  Add flour and mix well, stir in chocolate pieces (exact amount of chocolate depends on flavor desired) Pour batter into baking pan.  Bake 35-45 minutes. Cool before cutting.
