Food Terminology  A to Z (continued)

Tomatoes will keep longer if you store them stem down.
Tomatoes may be broiled and sprinkled with grated cheese for a different taste.
Tomatoes should never be left to ripen in direct sunlight, as they lose most of their vitamin C.
When slicing tomatoes it will be easier if you use a serrated knife with saw teeth such as steak or bread knife.
If you are expecting a frost and have tomatoes on the vine, pull them up by the roots and hang upside down in a cool basement until the fruit ripens.
Americans eat approximately 24 pounds of tomatoes per person, per year.

String Bean and Tomato Salad
 
1 pound string beans (choose the thinnest beans you can find) remove stems from ends of beans
1 Tbls. good red wine vinegar               
3 Tbls. peanut oil or olive oil
Salt and pepper to taste 
    ++++++++
3 large tomatoes with or without the skin
1 Tbls. red wine vinegar                             
1/3 cup virgin olive oil
1/3  cup thinly sliced onions
10-15 basil leaves  or fresh parley  chopped coarsely
    ***********
Place 1/2 inch water in a wide stainless steel saucepan and add 1/2 tsp. salt.  Bring to a boil, add the beans. They should cover the bottom of the pan in one layer.  Cover and bring to a strong boil, cook for 5 minutes. Drain well, place on large plate and toss with wine vinegar and oil.
Slice tomatoes thinly, place beans in center of plate and arrange tomatoes around the beans, sprinkle with salt then sprinkle with vinegar and oil.
Slice onion very thin and separate rings place on top for garnish and add basil or parsley.

Pepperoni  Pizza  Spread

2 cups (8 oz.) pkg. shredded mozzarella cheese
2 cups (8 oz.) shredded cheddar cheese
1 cup mayonnaise 
1 cup chopped pepperoni
1 (4 oz.) can drained mushrooms or fresh chopped
1/2 chopped onion 
1/2 cup chopped green pepper or mixed red and green
1 can chopped ripe olives (6 oz.)
1/2 cup chopped stuffed olives

In a large bowl combine all ingredients.  Transfer to 11" x 7" x 2" glass dish. Bake uncovered 350 D. for 25-30 minutes until lightly browned around edges and bubbly. Serve with French bread, English muffins, or T. chips.  Makes 6 cups.  Good.

WOW  Cake

1 Box Duncan Hines Butter Golden Cake mix 
1 small box instant vanilla pudding
1 cup sour cream 
1/2 cup water
1/2 cup vegetable oil
3 eggs   
3/4 cup chocolate chips
1  4oz.  German chocolate bar grated coarsely. 
1/2 cup nuts chopped fine

In a large bowl combine cake mix, pudding, sour cream, water, oil and eggs.   Mix well and fold in grated chocolate, nuts and chocolate chips.  Grease and flour a large bundt pan.  Pour in batter. Preheat oven to 300 D. and bake 60 minutes. Turn off oven when 60 minutes is up and leave cake in oven for an extra 10 minutes.  Cool thoroughly.  Can be frosted but is moist and tasty and is quite good without frosting.  If desired sift top with powered sugar.  Enjoy
