Pumpkin Crunch Cake

1  box of yellow cake mix. Divided (butter flavored is good)
2 eggs
1- 2/3 Libby's pumpkin pie mix
2 tsp. pumpkin spice
1/2 cup flaked coconut
3 tbls. softened butter
1/4 cup chopped nuts

Combine 3 cups cake mix, eggs, pumpkin pie mix, and spice in large mixer bowl. Beat on low speed until moistened, then beat on medium speed for 2 minutes. Pour into greased 13" x 9" pan. Combine remaining cake mix, coconut and nuts in a small bowl, cut in butter with pastry blender or two knifes until crumbly. Sprinkle over batter.

Bake  350D oven for 30-35 minutes until toothpick comes out clean. Cool in pan on rack.

World's Best Pimiento Cheese

1/4 cup mayonnaise
1 (3 ounce) package cream cheese, soft
3 garlic cloves, minced
1/4 cup chopped flat-leaf parsley
6-8 drops Tabasco sauce
1 (2 oz. jar pimientos, un-drained
3 cups finely shredded sharp cheddar cheese
1 cup pecan chips, or pecan nuts, chopped fine or pulsed to coarse texture in a blender.

Combine mayonnaise, cream cheese, garlic, parsley, Tabasco in a food processor or blender until smooth.  Spoon into a medium bowl, add un-drained pimientos, cheddar cheese and pecans; mix well.  Cover with plastic wrap and refrigerate at least 4 hours to allow flavors to blend.  Serves 16.

Jack Horner Caramel Apples       

8 medium apples with sticks.
15 oz. condensed milk
1/2 cup sugar
1/2 cup light corn syrup
1/3 cup packed brown sugar

Combine in heavy saucepan 15 oz. condensed milk, 1/2 cup sugar, 1/2 cup light corn syrup, 1/3 cup packed brown sugar. Cook to 234 D. (soft ball stage) stirring constantly.

Remove from heat and stir in 1 tbls. butter and 1-1/2 tsp. vanilla.  Quickly dip and twirl apples. Cool on greased cookie sheet. 
Easier to eat than regular caramel, but about the same flavor.

Fresh Cranberry Salad

1 pkg. Raw cranberries
2 navel oranges(grind the whole oranges and cranberries)
Add 1-1/2 cups sugar.

Let set until sugar melts. Mix well 2 small boxes of lemon Jello with 3 1/2 cups boiling water. Then add orange mixture and 1 1/2 cups finely chopped celery and 1 cup chopped pecans. Stir well and refrigerate.
Very tasty and worth making all year if you can get some cranberries put away in the freezer.
