Shrimp Salad with Vinaigrette


3 Tbls. red wine vinegar or apple cider vinegar
1 garlic clove, minced
1 tsp. sugar
1 tsp. grated orange peel
3 Tbls. olive or canola oil
2 medium navel oranges, peeled
1 pound cooked medium shrimp, peeled and deveined (cook about 4 minutes, then run under cold water)
2 Tbls. pimientos
5 cups Bibb or Boston lettuce torn in small pieces 
4 cups of leaf or Iceberg lettuce torn
1/4 - 1/2 cup sliced green onions

In a bowl or cup combine first 5 ingredients, whisk in the oil, set aside. Cut oranges into 1/2 inch slices; cut slices into quarters. Add shrimp, pimientos and oranges in a large bowl, whisk and pour over the vinegar mixture. Toss to coat and chill for at least one hour. Just before serving, toss shrimp mixture with lettuce and onions. Yield 6 good portions.

Toasted Bread Cups

These are nice for a small salad or chicken or tuna salad. 

12 slices whole wheat bread, crusts removed.
Refrigerated butter-flavored spray
2 Tbls. grated Parmesan cheese
1/8 tsp. onion powder

For each toast cup, place one slice of bread halfway over another; roll flat with rolling pin. Press into jumbo muffin cups coated with non-stick cooking spray. Spritz bread cups with butter spray. Combine parmesan cheese and onion powder; sprinkle over cups. Bake at 350D for 13-15 minutes until bread is toasted. Cool for 5minutes before removing from pan to a wire rack to cool completely.

Turkey Meat Loaf

1 medium onion, finely chopped
1 Tbls. oil
2 eggs
1/2 cup milk
2 tsp. lemon juice
1 tsp. salt
1 tsp. dried basil
1/2 tsp. dried oregano
1/2 tsp. pepper
2 cups soft whole wheat bread crumbs (about 5 slices)
1 package (10) frozen chopped spinach, thawed and squeezed dry
2-1/2 lbs. ground turkey
1/2 cup salsa
1 Tbls. melted butter   

In skillet, sauté onion in oil until tender; set aside. In a bowl combine eggs, milk, lemon juice, salt, basil, oregano and pepper. Add bread crumbs, spinach and onion; stir to combine. Crumble turkey over mixture and mix until blended. Shape into a loaf and place in a 13 in.x 9 in. pan coated with cooking spray. Spoon salsa over the top. Bake uncovered at 350 D for 30 minutes. Drizzle with butter and bake 30-35 minutes longer. Yield 10 slices.
