Squash Rings With Green Beans

2 medium acorn squash
3/4 tsp. salt, divided (if desired, a sprinkle or two of pepper)
1/4 cup plus 2 Tbls. butter divided
1/2 cup brown sugar
2 Tbls. water
1 pound fresh green beans, cut into 1-1/2 inch pieces
1/4 tsp. basil
1/4 tsp. rosemary, crushed

Cut squash into 1 inch slices; discard seeds and ends. Arrange slices in a single layer in a greased 15-in. x 10-in. baking pan.  Sprinkle with 1/4 tsp. salt and pepper. Cover and bake at 350 D. for 40 minutes.

Meanwhile, in a small pan combine 1/4 cup butter, brown sugar and water; bring to boil. Brush over the squash. Bake, uncovered, for 15 more minutes or until tender, basting several times.

Place beans in a saucepan and cover with water; bring to a boil.  Cook for 10 minutes or until tender; drain. Add basil, rosemary, and remaining butter, salt and pepper. Spoon into baked squash rings.

Fruit  Pizza

1 roll of Pillsbury sugar cookie dough

Spread cookie dough on a pizza pan and bake as directed on package.

Mix together:
1  8oz. Package cream cheese
1/2 cup sugar
1 Tbls. vanilla

Spread cream cheese mixture over baked cookie. Take pizza cutter or sharp knife and cut rows about 2 inches apart, then cut in other direction. (If you put fruit on first and then cut, the fruit is not as pretty and juice will run.)

Arrange sliced fruit very carefully making a nice design. (Fruit to use would be kiwi, strawberries, peaches; if eating soon, then bananas would be great also.)

Next you make a glaze:
Mix together:
1 cup orange juice
1/2 cup sugar
2 Tbls. corn starch

Cook until thick stirring constantly, pour over fruit on cookie. Best if refrigerated for awhile.
