Food Terminology  A to Z (continued)

Roast:  Meat cooked in the oven or over a dry heat.
Roux:   A special cooked mixture of butter and flour usually used to 
            thicken sauces and stews.
Sauté:  Browning or cooking in a pan using a small amount of fat.
Scald: Heating a semi-liquid until a skin forms on the top.  Usually
            to a point just before the boiling point.

Strawberry Banana Jell-O Salad or Dessert ****


1 package strawberry gelatin (6oz.) 
2 packages (10 oz. each)frozen sweetened sliced strawberries partially thawed
1 can (20 oz.) crushed pineapple undrained
1 cup mashed firm bananas (3)
1/2 to 3/4 cup chopped walnuts (if desired)
2 cups (16oz.) sour cream
2 tsp. sugar                   
1/2 tsp. vanilla         
1 cup boiling water

In a bowl dissolve gelatin in water, stir in strawberries, pineapple, bananas & nuts(optional).  Pour half in a 13 x 9 x 2 in. dish.  Refrigerate for 1 hour or until set.  Combine sour cream, sugar and vanilla mix well.  Spread over chilled gelatin, spoon remaining gelatin mixture over top.  Chill overnight or for several hours. Yield 12-15 servings.

Chocolate Peanut Butter Cookies
    Yield 11 dozen.  This recipe makes a lot, but is very tasty and great to share with a group or to give away.

2 cups butter or margarine 
1/4 cup shortening
2 cups baking cocoa 
1 cup chocolate syrup
1/2 cup peanut butter 
6 eggs
5 cups sugar 
5 tsp. vanilla extract
5 cups all-purpose flour 
3 tsp. baking soda
1 tsp. salt

Melt butter and shortening, stir in cocoa, chocolate syrup and peanut butter until smooth.  In a very large bowl beat eggs and sugar until lemon colored, beat in the chocolate mixture and vanilla.  Combine flour, baking soda and salt; gradually add to creamed mixture.  Drop  by tsp. 2 in. apart onto ungreased baking sheets.  Flatten with a glass dipped in sugar.  Bake at 350 D. for 10-12 minutes.  Cool for 2 minutes before removing to wire racks.
Filling: 
1/2 cup butter or margarine softened         
1 cup chunky peanut butter 
3/4 cup milk       
2 tsp. vanilla extract
11 cups confectioners' sugar

In a mixing bowl beat butter and peanut butter.  Beat in milk and vanilla.  Gradually add confectioners' sugar beating until well blended.  Spread on the bottom of half of the cookies; top with remaining cookies.  Yield 11 dozen

Roasted Fan-Shaped Potatoes


Scrub  and wash number of potatoes needed, melt butter, 2 slices dry bread crumbs, shredded Parmesan cheese and salt
With a sharp knife, slice potatoes thinly but not all the way through. Place potatoes in a greased shallow baking pan.  Sprinkle with salt; brush with butter and bake at 425 D. for 35 minutes.  Brush potatoes with butter and sprinkle with bread crumbs, bake 20 minutes longer.  Sprinkle with cheese bake 5-10 minutes longer .  Best to poke with fork before adding the cheese, fork should go in easily if done. A little different and pretty.
