Turkey Burger Patty Melts

3/4 cup chopped pecans
1-1/2 lbs ground turkey
1 tsp. garlic salt or powder
1 tsp. salt
1/4 tsp. pepper
1/2 cup canned whole-berry cranberry sauce
1/3 cup Dijon mustard
12 slices sourdough bread or French bread slices
6 slices Monterey Jack cheese

Heat pecans in iron or nonstick skillet over medium-low heat, stirring often for 6 minutes. Cool. Combine ground turkey, salt, pepper, garlic, pecans. Mix well. Shape into 6 patties that will fit on bread slices after cooked. Put patties in well oiled skillet, cook 6-7 minutes on each side. Combine Cranberry sauce and mustard, spread on each slice of bread, add some lettuce and a patty.

Cuban Pork Tenderloin

1-1/2 pounds pork tenderloin, trimmed
1/4 cup fresh orange juice
1/4 cup grapefruit juice, fresh
2 Tbls. parsley
1 tsp. cumin
1 tsp. oregano
2 cloves garlic, finely chopped
1/2 tsp. kosher salt
1/2 tsp. red pepper flakes

Mix all the juice and seasonings and put in gallon-sized plastic bag with pork loin. Refrigerate for up to 4 hours. Grill on high 400 D. Cook until 145 degrees Fahrenheit. Let stand 5min.

Hearty Italian Soup

1 (16 oz.) package mild Italian sausage
2 tsp. olive oil
1 large onion, diced
2 minced garlic cloves
1 (48 oz.) can chicken broth
2 cans cannellini beans, drained and rinsed
2 (14.5 oz) cans diced tomatoes
1 tsp. dried Italian seasoning
1 (5 oz.) package baby spinach
1/4 cup chopped parsley
1 Tbls. basil

Cook whole sausage in oil over medium heat for 6-8 minutes. Remove sausage, then saute onions, add garlic  and stir. Cut sausage in 1/4 inch slices and return to skillet or dutch oven. Stir in chicken broth and stir until heated. Add beans, tomatoes and Italian seasoning. Simmer for 25 minutes, then add spinach and basil, stirring well, and cook 5-6 minutes. Serve and enjoy. Serves 6 or more.
