Saucy Orange Roughy

1 Tbsp. sugar
2 tsp. cornstarch
1/2 tsp. chicken bouillon granules
dash of pepper
1/2 cup orange juice
1 tsp. lemon juice
1/4 tsp. grated orange peel
1/8 tsp. tarragon
1 pound orange roughy fillets
1/2 tsp. salt

In a small microwave-safe dish, combine first six ingredients until smooth.

Microwave, uncovered, on high for 1 minute; stir. Cook 1 minute longer or until thickened. Stir in orange peel and tarragon; set aside. Place fish in ungreased 11-in. x 7-in. x 2-in. microwave-safe dish, with the thickest side toward the outside of the dish. Sprinkle with salt. Cover and microwave on high for 4 minutes. Top with orange sauce. Microwave, uncovered, on high for 45-60 seconds or until fish flakes easily with a fork.

Garnish with orange slices and fresh tarragon if desired. Yield serves 4.

Warm Kidney Bean Salad

2 Tbsp. extra-virgin olive oil
2 cups slivered onion
1 tsp. dried oregano
1/4 cup cider vinegar or red wine vinegar
2 (15-oz.) cans kidney beans, rinsed and drained (or also good made with Great Northern Beans)
1 tsp. kosher salt
1 cup chopped flat-leaf parsley
1/4 cup pimento-stuffed olives, sliced in half 
 
Heat olive oil in a large pot over medium heat. Add onion, saute 5 minutes. Add oregano, vinegar and beans. Cook over low heat until beans are warm. Remove from heat and stir in salt, parsley and olives.

Serve warm or at room temperature. Serves 6.

Frosted Orange Cookies

2 medium navel oranges
1/2 cup butter-flavored shortening
1 cup sugar
1/2 cup milk
2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2-1/2 cups confectioners' sugar
1 Tbls. butter melted.

With a sharp paring knife, score each orange into quarters; remove peel. Use knife to remove white pith from peel and fruit; discard. Quarter oranges and place in a blender. Add peel; cover and process until smooth (mixture should measure 3/4 cup.)
   
In a mixing bowl, cream shortening & sugar. Beat in milk and 6 Tbsp. orange mixture. Combine the flour, baking powder, baking soda and salt; add to creamed mixture until blended.

Drop by rounded tsp. 2 in. apart onto greased baking sheets. Bake at 350 C for 10-13 minutes or until set and lightly browned. Remove to cool. 

For frosting, combine confectioners' sugar, butter and enough of remaining orange mixture to achieve spreading consistency. Frost cookies. 

Yields about 4 dozen.
