Food Terminology  A to Z (continued)

Score:          Cutting narrow gashes partially through the outer surface of
                    a fruit or vegetable to prevent curling.
Sear:            A quick browning of the surface of a food.
Shortening:    A fat used for baking or frying,
Sift:              To pass through a sieve to remove lumps.

Chicken Salad Puffs

Stuffed with a chunky chicken salad, these pretty golden puffs are perfect for a ladies luncheon or light supper.
1 cup water  1/2 cup butter(no sub.)
1/2 tsp. salt  1 cup all-purpose flour
4 eggs
Filling:
2 cups finely chopped cooked chicken
1 can pineapple, well drained (8oz.)
1/2 cup mayonnaise  1/4 cup chopped celery
1/4 cup thinly sliced green onions 
1/4 cup chopped pecans
2 tbls. sweet pickle relish 1/4 tsp. onion salt
1/4 tsp. garlic salt  1/4 tsp. paprika
Salt and pepper to taste
In a saucepan, bring water, butter and salt to a boil.  Add flour all at once and stir until a smooth ball forms.  Remove from the heat; let stand for 5 minutes.  Add eggs, one at a time, beating well after each one.  Continue beating until smooth and shiny.  Drop by rounded teaspoonfuls 2 in. apart onto a greased baking sheet.  Bake at 400 D. for 15-20 minutes or until golden brown.  Remove to wire racks.  Immediately cut a slit in each puff to allow steam to escape; cool.  Split puffs by cutting tops off, set tops aside.  In a bowl, combine the filling ingredients; mix well.  Fill puffs and replace tops.  Refrigerate until serving.  Yield; about 3-1/2 dozen.

Frosted  Shortbread

1 cup butter softened  1 cup packed brown sugar
1 egg yolk  1 tsp. vanilla extract
2 cups all-purpose flour 1/4 tsp. salt
4 milk chocolate candy bars;(1.55 ounces each) broken into rectangles
1/2 cup chopped walnuts
In a mixing bowl, cream butter and brown sugar.  Add egg yolk and vanilla; mix well.  Combine flour and salt; add to creamed mixture. Press into a greased 15" x 10" baking pan or little smaller would work also.  Bake at 350D. for 15-18 minutes or until lightly browned. After taking out of oven place candy bar pieces over crust, let stand for 1 minutes then spread evenly .  Next sprinkle with nuts. Cool. 3 dozen.

Sunny Citrus Cooler

1 can(46oz.) pineapple juice
2 cans(12oz.)  frozen orange juice concentrate, thawed
3/4 cup lemonade concentrate 
6 cups ginger ale or white soda, chilled fresh orange slices(optional)
In a 1 gallon pitcher, combine pineapple juice, orange juice concentrate and lemonade concentrate.  Add ginger ale and mix well. serve over ice. garnish with orange slices if desired.  Refrigerate leftovers. Yield 1 gallon.
