Salad Dressings:

Thousand Island  

1 cup mayonnaise
1/4 cup catsup
3 Tbs.sweet relish
Few drops fresh or bottled lemon juice
Pinch of sugar

Stir all ingredients together well, and taste. If needed, add little more catsup and, or sweet relish. It should taste like it is a nice blend of ingredients. This dressing, in my opinion, should just be put on top of salad.

Blue Cheese

1 cup mayonnaise
1/2 cup blue cheese
Oregano
Milk or Half and Half

Crumble the blue cheese  into mayonnaise, add very small amount of oregano seasoning. Stir well, add a little milk or ½ & ½. Stir well. Leave as is for thick dressing. Or add a bit more for medium mixture. Chill and check later. It is usually best to add small amount. One can add more, but you cannot take it back out. Let each one put their own dressing on.

French Dressing

1 cup salad oil
2/3 cup catsup
1/2 cup vinegar
3/4 sugar
1 tsp. salt
1 tsp. paprika
2 Tbs. lemon juice of one lemon 

Mix all ingredients together in a blender and blend until smooth. Then put in jar and refrigerate. Stir well before serving.

The Original Caesar Salad (except now we use hard-boiled yolks)

Three medium heads romaine lettuce, chilled, washed, dried. 
1/3 cup Garlic Olive Oil
2-3 Tbs. red-wine vinegar
1 lemon, halved
2-3 cooked egg yolks
Salt and pepper
Dash Worcestershire sauce
6 Tbs. grated Parmesan cheese
1 cup croutons

Place lettuce in a chilled salad bowl, tearing in bite size pieces. Drizzle with garlic oil, then vinegar. Squeeze lemon over salad, using fork to help free juice. Add eggs, cutting into salad. Add salt and Worcestershire. Grind black pepper. Sprinkle with parmesan cheese. Do not stir, but rather roll-toss. Just take a very large spoon fill it up and turn it over until all is coated. Add croutons, toss gently.

Garlic Olive Oil

6 cloves garlic
1 cup olive oil

Make ahead of time, several days is fine. Slice garlic cloves lengthwise in quarters. Let stand in olive oil or half of salad oil. Leave at room temp.

Croutons

Cut bread in 5 strips one way, then across 5 times to make squares. Spread out on cookie sheet, pour very little garlic olive oil over them. Heat in 225 D oven about a hour or more. Sprinkle with parmesan cheese. Store in jar in refrigerator. So this and the oil can be made earlier. Best not to make salad ahead of time. Assemble salad then serve.
