Hint:  On the end of the box of foil and handy wrap products is a push place to lock, so you will not have to ever struggle with product getting stuck to itself unevenly. Try it.

Tropical Cake


1 box yellow cake mix
1 package 3-4 oz. instant vanilla pudding mix
1/3 cup vegetable oil
3 eggs
1 ¼ cups lemon-lime soda
Topping:
1 cup sugar
2 tbls. all purpose flour
2 eggs lightly beaten
½ cup butter (1 stick)
1 can (8oz.) crushed pineapple, drained
1 cup coconut

In a large mixing bowl combine cake and pudding mixes, oil and 3 eggs.  Beat on low speed until smooth. Add soda, beat on medium for 2 minutes.  Pour into greased 13in.x9in.x2in. Bake in heated oven at 350D for 35-40 min. When baked place on wire rack. In saucepan combine all topping except coconut.  Cook and stir over medium heat until thickened, cook 2 minutes longer stirring well. Add coconut then spread on warm cake.  After cooled cover and refrigerate until ready to serve.
Serves 12-16.

Fudge Sauce

1 stick butter
1 cup (6 oz.) semisweet chocolate chips
1 can (12 oz.) evaporated milk
2 cups confectioners sugar
1 tsp. vanilla
In heavy saucepan melt butter and chocolate over low heat.  Stir in milk, sugar and stir until smooth. Bring to boil, cook and stir for 8 minutes or until thick, add vanilla. Serve warm over cake. 12 servings.

Molded Shrimp Salad


1 can (10 ¾ oz.) condensed cream of mushroom soup, undiluted
1 package (8 oz.) cream cheese, cubed
1 envelope unflavored gelatin
3 tbls. cold water
1 cup finely chopped celery
3 tbls. lemon juice
1 cup mayonnaise
1/2 pound shrimp (peeled, de-veined and coarsely chopped)
4 green onions finely chopped

In saucepan heat soup and cream cheese over medium heat, stir and set aside. In small microwave bowl sprinkle gelatin over water let stand 1 minute. Microwave on high 40 seconds, stir let stand for 2 minutes. Stir the gelatin, celery, mayonnaise, lemon juice and onions into soup mixture, fold in shrimp. Pour into a 5 cup ring mold sprayed with non stick spray. Refrigerate for 8 hours, then invert on a serving plate. Fill center with lettuce pieces and cooked shrimp if desired. Or use a sprayed glass layer dish.
Yield 4 cups. Serve with crackers.
