Microwave Tuna Casserole

6 Servings (microwave 6-8 minutes)

1/2 cup sour cream
1/2 cup mayonnaise (not low fat)
2 tsp. prepared mustard
1/2 tsp. salt
1/2 tsp. dried thyme
1/4 tsp. dill weed

5 cups cooked egg noodles
2 cans (6 oz. each tuna, drained)
1/2 cup chopped celery
1/3 cup sliced green onions
1 small zucchini, sliced
1 cup shredded cheddar cheese
1 medium tomato, chopped

In a small bowl, combine the first six ingredients; mix well. In a large bowl combine noodles, tuna, celery and onions. Stir in sour cream mixture. Spoon half into a greased 2 qt. microwave-safe dish, top with half of the zucchini. Repeat layers,microwave uncovered on high for 6-8 minutes until heated. Sprinkle with cheese and tomato, cook 2 min. more. For a really quick meal have noodles cooked earlier.

Melt in the mouth cookies

Brown sugar cookies--makes 3 dozen- EZ. Be careful removing from
cookie sheet, they are thin.

Put 1/2 cup (1 stick butter) softened in bowl, add 1 cup packed light
brown sugar. Mix well then add 1 egg, 1 tsp. vanilla stir well. Measure 3/4 cup (sifted) all purpose flour, add to that 1 tsp. baking powder,1/2 tsp. salt. Mix flour with brown sugar mixture. Stir in 1/2 cup finely chopped walnuts. Drop by scant tsp. on ungreased cookie sheet. Bake 400 D. 5-6 min. cool then remove to rack.

Deep Dish Eclair

9 x13 x 2 inch pan or glass

1 pound box graham crackers
2 pkg.(4 oz.) instant French vanilla pudding or add tsp. vanilla to plain
vanilla pudding
3 1/4 cups milk
8 oz. cool whip

In large bowl combine milk and pudding, beat well with whisk or mixer
till thick, fold in cool whip. In 9 x13 glass dish place 1 layer of graham crackers, spread half of pudding over crackers. Repeat crackers and pudding, top with more crackers and refrigerate.

Topping:
2 oz.(2 squares of baking chocolate)
2 tsp. light Karo syrup
2 Tbs. butter
2 Tbs. water

Heat in microwave 20-30 seconds, stir well. Heat until chocolate is melted, add tsp. vanilla and 1 1/2 cups powdered sugar. Stir well
and spread over cracker mixture. Chill at least 3 hrs. or overnight.

If you don't have the Karo, use honey or pancake syrup.
