Whenever you fix baked potatoes in the oven, bake a few extra. To reheat put 2-3 tbls. olive oil in iron or regular skillet. Slice potatoes with skin left on, cook on medium heat till brown turn over and cook 2-3 more minutes. Really tasty and goes great with fried or scrambled eggs, for breakfast or evening meal. For evening, add a vegetable and fruit for dessert.
Baked Potatoes 350D. 60-70 minutes
Wash and scrub potatoes well, stick with fork or sharp knife. With clean hands rub a little olive oil on each potato, place in 13 x 9 x 2 in. pan. Bake uncovered turn once during baking time, stick before taking out of oven may need 10 more minutes depending on size.
This might be a good time to put in a whole chicken and bake uncovered, rubbed with olive oil and pour a little salt on the chicken or how about a meat loaf? Chicken may need 1/2 hour more than potatoes so put that in first. Meat loaf should take the same time as potatoes.
Dazzle Green Bean Dish
Take about a pound of fresh green beans (just made this the other day and used store bought beans) washed and stemmed. If beans are large break in half. 6-8 large fresh mushrooms, and half or more of a thinly sliced onion Take a medium to large glass or plastic bowl, add green beans and half cup of water, microwave on high for 4 minutes, leave in microwave. In large skillet add 3 tbls olive oil, cook onion on medium heat until lightly browned, stirring often. Stir in sliced mushrooms, cook 3 minutes, stir once or twice. Pour water from beans, add to onion mixture and stir well, cover for 2-3 minutes to heat. Beans should be tender but not soft. Nice to serve with beans would be Raman noodles, cooked and left over vegetable, or carrots, corn, salad or beets. Go for color variation.
Of course the bean dish would go well with meat and potatoes if desired.
Shortcake (easy and tasty) 450D Bake 15 -20 minutes serves eight.
Top with strawberries or fresh peaches. Cool whip and/or vanilla ice cream. Grease round or small square pan with shortening.
1/3 cup shortening
2 cups all-purpose flour
2 tbls. sugar
3 tsp. baking powder
1 tsp. salt
3/4 cup milk
Cut shortening into flour in a medium bowl, add sugar, baking powder and salt. Blend with pastry blender or fork until mixture is like fine crumbs. Stir in milk just until blended. Take greased 8 x 1 1/2 in pan or little larger, pat dough in pan. Bake 15-20 minutes, cut into squares or wedges. Serves 8.
Another way to fix shortcake is to make dough into a ball, knead 20 times, roll out 1/2 in. thick, then cut with 3 in. cutter, place about 1 inch apart on ungreased cookie sheet. Bake 450 D. 10-12 minutes.
