Chocolate Peanut Butter Fudge
Yields about 40 pcs.

1/2 cup butter, melted
1 1/2 cups creamy peanut butter
3 cups powdered sugar
1/2 cup firmly packed brown sugar
1 1/2 tsps. vanilla extract
1 - 7oz. Hershey's milk chocolate bar with 1/3 cup butter

Combine 1/2 cup butter (melted), peanut butter, powdered sugar, brown sugar and vanilla; mix well.
Press mixture into a 13 x 9 inch pan or glass layer dish and let set until firm. 

Melt milk chocolate bar and 1/3 cup butter. Spread this over peanut butter mixture. Let stand until firm. Delicious.

Fried Chicken Livers

Rinse livers with running water over them, drain well. Put in a medium bowl that has a lid, add 1/2 cup of flour, then add salt and pepper, stir with a fork.

In skillet (I prefer iron) put enough salad oil to a bit more than just covering the bottom of the skillet. Heat to medium. Put five or six livers in flour; cover and shake. To coat them well, put in heated oil. Turn oven on to 350 D. and get out a glass or metal baking pan. Only brown livers lightly for 5 minutes then turn over for another 2 minutes, they will still be pink in the center. Next place in oven, do not cover. Bake for 20-25 minutes, drain off any oil, or remove to plate to serve.

If you would like to serve baked potato, turn oven on half an hour or so earlier. Wash potato well, poke a few holes in it, place in square or medium pan, rub with oil, or olive oil, bake uncovered. Leftover baked potatoes are very tasty to slice down and serve with eggs. Good to turn potatoes over half way through their baking. Most potatoes take over an hour to bake, so they would need to be in oven 1/2 an hour before starting the livers.

Chef's Salad

4 cups of mixed salad greens
2-3 cups of left over turkey, chicken or ham
10-12 cherry tomatoes, halved
8-10 fresh mushrooms sliced
Red onion, thinly sliced
Few slices of green or red pepper, or mixed
Few bite size pieces of cheese
2-3 diced hard boiled eggs
Dressing of your choice

This looks best when made on each plate.  A cup or bowl of hot soup would be nice served first.
