Favorite Deviled Eggs

6 hard cooked eggs, finely chopped
3 bacon strips, cooked and crumbled
1/4 cup mayonnaise
1 tsp. minced onion
1/2 tsp. salt (optional)
1/8 tsp. pepper
1/4 tsp. prepared mustard
1 cup (4oz.) shredded cheddar cheese

In a bowl combine ingredients except cheese. Stir until mixed well. Shape into 1 inch balls and roll in cheese. Cover and refrigerate until serving. Yields 2 dozen.

Creamy Wild Rice Soup

4 cups water
1/2 tsp. salt
1/2 cup uncooked wild rice
3 Tbls. chopped green onions
1/4 cup shredded carrot
3 Tbls. chopped pecans
6 Tbls. butter
1/3 cup all-purpose flour
2 cans (14-1/2 ozs.) Chicken broth
1/2 cup diced fully cooked ham
1/4 pepper
1 cup half and half cream

In a large saucepan, bring water and salt to boil. Add rice, reduce heat, cover and simmer for 50 -55 minutes, or until tender. Remove from heat, let stand 10 minutes; drain and set aside. Sauté onions, carrots and pecans in butter for 1-2 minutes. Stir in flour until blended, gradually add broth. Bring to boil, cook and stir for 2 minutes or until thickened. Reduce heat; add ham, pepper and rice, cover and simmer for 5 minutes or until carrots are tender. Add cream and heat thoroughly (do not boil). When heated, serve.

Chunky Chicken Soup

3 boneless, skinless chicken thighs cut into 1-inch pieces
1 cup sliced celery
1/2 cup chopped onion
2 Tbls. vegetable oil
6 cups chicken broth
1-1/2 cups thinly sliced carrots
1 tsp. thyme or dried dill weed
1/2 tsp. salt, few dashes pepper
1/2 cup uncooked macaroni
1-1/2 cups frozen peas

In a 3 qt. saucepan, cook chicken, celery and onion in oil until chicken juices run clear, about 30 minutes, stirring often. Add carrots, broth and seasoning then bring to a boil. Reduce heat; cover and simmer for 45 minutes. Stir in macaroni and peas, cover and cook for another 15 minutes. Yield 8 servings.

Water stains on wood - Make a paste of ash and water and rub on wood.  Wipe off and wax.
