Apple Crunch                   

6 large apples, peeled, cored and sliced thin   
½ cup granulated sugar
½ tsp. nutmeg or cinnamon                 
1 cup all-purpose flour   
1 cup brown sugar

In medium to large bowl put 1 stick butter and the brown sugar, allow butter to soften. Grease an 8 inch square pan, spread out the apples and top with the ½ cup sugar. Next sprinkle on the spice. With a fork mix the butter and flour until coarse crumbs, put on top of apples and bake for 1 hour at 325D. Serve with ice cream or cool whip. Serves 6-8.

Buttermilk Pan Rolls

2 pkgs. ¼ oz. active dry yeast
1/4 cup warm water, 110-115 D
1-1/2 cups warm buttermilk
½ cup vegetable oil
3 tbls. sugar
4-1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt

In a large mixing bowl, dissolve yeast in warm water. Add buttermilk, oil and sugar. Combine flour, baking soda and salt. Add to yeast mixture and beat until smooth. Do not knead. Let stand for 10 minutes. Turn dough onto lightly floured surface. Punch down. 


Shape into 24 balls and place in two greased 9 inch square pans.  Cover and let rise in a warm place until doubled, about 30 minutes.  Bake at 400D for 20 minutes or until golden brown. Remove to wire rack. Warm buttermilk will look curdled. Makes 24 rolls.

Stir Fried Shrimp and Mushrooms

1 cup rice (not instant)
4 garlic cloves minced or less if desired
2 tsp. oil
1 pound uncooked medium shrimp, peeled and deveined
3 cups fresh mushrooms sliced
1 cup sliced green onions
1/4 cup chicken  broth

Cook rice in medium pan. Put 1 cup rice (not instant) and 2 cups water cook 20 minutes, shut heat off and let set for 5 minutes. Check rice, it should be tender. Serve on large plate.

In large skillet sauté garlic in oil for 1 minute. Add shrimp, onions and mushrooms. Stir well. Cook for a minute or so. Then add broth and cook 2-4 minutes longer, until shrimp turns pink. Serve on large platter of hot rice. Garnish with lemon slices.
