Cheese & Fruits: 

Cheddar:  Best with tart Jonathan apples
Swiss: Best with tangy Greening apples and slender green finger grapes
Blue: Best with sweet, juicy Anjou pears or spicy, cinnamon colored Bosc pears
Brick: Best with sweet-sour Tikay grapes
Gouda: Best with Golden Delicious apples
Soft-ripened variety:  Best with deep purple grapes
Provolone:  Best with sweet Bartlett pears

Cheese-Caraway Sauce for Cooked Cabbage

Yield 1 ½ cups(6 servings)

2 tbls. butter
2 tbls. flour
1/4 tsp. salt
1/8 tsp. pepper
Few drops of Worcestershire sauce
1 ½ cups milk
1 ½ cups shredded sharp Cheddar cheese
2 tbls. caraway seeds
1 medium head cabbage, cut in wedges

Melt butter in saucepan.  Blend in flour, salt, pepper and sauce.  Gradually add milk and cook, on medium heat, stirring constantly, until sauce is smooth and thickened.  Add cheese and sit until melted. Add caraway seeds. Cook cabbage ahead of time or while you are making sauce. Be sure cabbage is warm, serve hot cheese sauce with cabbage, putting on top or let each person put on their own sauce.

Salsa  Guacamole


6 small ripe avocados, halved, pitted, and peeled
1/4 cup lemon juice
1 cup salsa
2 green onions finely chopped
1/4 tsp. salt or seasoning salt
¼ tsp. garlic powder
Tortilla chips

In a bowl mash avocados with lemon juice. Stir in the salsa, onions, salt and garlic powder. Serve with tortilla chips.  Yield 4 cups. Best to serve immediately.

Taco Party Wings

2-1/2  pounds chicken wings
1/4 cup cornmeal
1 envelope taco seasoning mix
2 tsp. dried parsley flakes
3/4 tsp. salt

Separate sections of chicken wings at the joints,  discard  wing  portion.  Combine remaining ingredients in a bowl or plastic bag; add chicken  and stir or shake to coat. Place in a single layer on two greased 15in. x 10in. baking pans.  Bake 350 D. for 25 minutes. Turn and bake 10 minutes longer or until chicken juices run clear. Yield 6-8 servings
