Measurements: 
a pinch........................................1/8 teaspoon or less
3 tsp............................................1 Tbls.
4 Tbls..........................................1/4 cup
8 Tbls..........................................1/2 cup
12 Tbls.........................................3/4 cup
16 Tbls.........................................1  cup

Simple  Salad
 
On individual plates break up Romaine lettuce or spinach leafs.  Add a few mandarin orange sections on top of lettuce and thinly sliced red onions (2 or 3). Over all drizzle French dressing.
You may use grapefruit sections.  Feta cheese is good also.

Easy Bean Soup

2 cans chicken broth or vegetable broth.
2 or 3 cans white beans of your choice.
1 can Rotel tomatoes (mild) or use half can of Rotel and half of regular tomatoes.
1 medium onion chopped and cooked in small amount of olive oil. Add other ingredients and heat till hot.
1/2  cup of water may be added if desired.

Date Balls
    (No Bake)

1 cup chopped dates  1 cup sugar
1/2 c. butter(1 stick)  1/2 tsp. salt
2 eggs beaten 
1/2 cup chopped nuts and 2 cups Rice Krispies.
Combine ingredients in saucepan except nuts and cereal.  Heat slowly, bring to boil for 10 minutes, stirring all the time.  Cool slightly, add Rice Krispies and nuts.  Cool.  Then form into balls and roll in coconut or Rice Krispies.

The Easiest Peanut Butter Fudge
 
One bag of chocolate covered vanilla drops.
This is an Old Fashioned candy, mostly bought only in the winter.
Measure out one cup of smooth or chunky peanut butter. Put candy in pan on medium heat stirring constantly until melted.  Take off of heat and add peanut butter stir until blended and pour on small to medium plate. Cool.
