Chicken Salad Bites

3 cups finely chopped, cooked chicken
1/4 cup finely chopped celery
1/4 cup sweet pickle relish
1/4 cup cooked salad dressing (recipe to follow)
2-3 Tbls. mayonnaise
1-2 Tbls. minced onion
1/4 tsp. pepper
Paprika
Chopped fresh or dried parsley
Finely chopped toasted almonds

First, combine all ingredients except the paprika, parsley and almonds. Shape  mixture into 1 inch balls and roll each in the paprika, parsley or almonds. Chill several hours.  Yield 3 dozen

Cooked Salad Dressing

2 egg yolks, lightly beaten
2 Tbls. vinegar
1 Tbls. butter
1 Tbls. sugar
1/8 tsp. salt
1/8 tsp. pepper
1/8 tsp. red pepper
1/8 tsp. celery seeds
1/8 tsp. dry mustard

Combine all ingredients in a small saucepan; cook over medium heat, stirring constantly, until thickened. Cool, yield 1/4 cup.

Honey-Bran Muffins

2 cups whole bran cereal
1 cup shredded wheat biscuit cereal, broken
1/2 cup boiling water
2-1/2 cups all-purpose flour
1/2 tsp. baking soda
1/2 cup shortening
1 cup honey
2 eggs, beaten
2 cups buttermilk

Honey butter: 1 (8oz.) Jar honey and 1/2 cup butter soft to put on baked muffins.

Combine cereals; add water, stirring well. Set aside. Combine flour and baking soda in a large bowl; make a well in center of mixture. Combine shortening and honey; add eggs and buttermilk, stirring until blended. Stir in cereal mixture, add to dry ingredients, stirring just until moistened. Spoon into paper-lined muffin pans, filling 3/4 full. Bake at 350 D. for 25 minutes, or until done. Remove from pans immediately. Serve with Honey Butter. Yield 2 ½ dozen.

Cranberry Punch

1 quart Cranberry juice cocktail
1 qt. Pineapple juice
1/4 cup sugar
2 tsp. almond extract
2 (33.8-oz.) bottles ginger ale chilled.

Combine all ingredients except ginger ale; stir until sugar dissolves. Chill to serve, pour juice mixture into punch bowl; gently stir in ginger ale. Yield 1 gallon.
