Steak and Vegetables

1-2 tbsp. cornstarch
1 tsp. beef bouillon granules
1 cup water
1/4 cup soy sauce
10 ounces boneless beef sirloin steak
1 medium green pepper, julienned
1 medium onion, halved & sliced
1 garlic clove, minced
2 tsp. canola oil
2 medium tomatoes, cut into eighths
1 can (8ounces) sliced water chestnuts, drained
1/8 tsp. pepper
4 cups hot cooked rice

In a bowl, combine the cornstarch, bouillon, water and soy sauce; set aside. Cut steak thinly across the grain, then cut slices in half; set aside. In a nonstick skillet or wok, stir-fry green peppers, onion and garlic in oil for 4 minutes, remove and set aside. Add meat, stir-fry for 4-6 minutes. Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir for 1 minute or until thickened. Add tomatoes, water chestnuts & green pepper mixture; cook and stir until heated through. Sprinkle with pepper.
 
Yield 4 large servings. Serve over the hot rice.

Lazy Daisy Cake

2 eggs
1 cup sugar
1 tsp. vanilla
1 cup cake flour
1 tsp. baking powder
1/4 tsp. salt
1/2 cup milk
2 tbps. butter

Frosting:

3/4 cup packed brown sugar
1/2 cup butter (1 stick) melted
2 tbsp. cream (1/2 & 1/2)
1 cup shredded coconut

In a large bowl, beat eggs, sugar and vanilla on high about 4 minutes. Combine flour, baking powder and salt. Add to egg mixture, beat on low. Heat milk and butter just until butter is melted, add to batter beating thoroughly (batter will be thin). Pour into greased 9 in. square pan. Bake at 350D for 20-25 minutes. Cool slightly. Blend all frosting ingredients well; spread over warm cake. Broil for only 3-4 minutes, 4 inches away from heat until lightly browned. 

Yield 9 servings. A simple cake, but very tasty.

Old Fashioned Molasses Cookies   

1 cup shortening
2 eggs
1 cup molasses
4 cups all-purpose flour
4 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 tsp. ginger
Sugar for dipping

Preheat oven to 350D. Cream together shortening and sugar. Add eggs and molasses. Sift flour with cinnamon, baking soda, salt and ginger. Add to sugar mixture, stir well. Roll balls the size of walnuts and coat in sugar. Place on un-greased cookie sheet 2 inches apart. Bake for 12-15 minutes at 350D. Makes 3-4 dozen soft cookies.
