 Squash  &  Tomatoes---- 8 servings 
 
½ pound bacon coarsely diced 
3 large onions, cut in half and sliced in thin moons 
2 green peppers, cut in half and coarsely diced 
1 cup chopped parsley, divided 
¼ cup chopped fresh basil or 2 tsp. dried basil 
7 ripe tomatoes, peeled, seeded and chopped (if large use less than 6 tomatoes) 
10-12 small yellow squash, diced 
salt and pepper to taste.   
 
Place bacon in heavy skillet, cook half way then add onion and green pepper, sizzle for 3 minutes.  Add basil, tomatoes, squash, salt and pepper and half of the parsley.  Cook just until squash is tender, but not mushy.  Garnish with rest of the parsley

Orange Macaroni Salad---- Serves 6-8 
 
½ cup mayonnaise 
1 tsp. brown mustard 
1/4 tsp. salt 
1/8 tsp. black pepper 
2 large oranges, peeled  and cut into bite size pieces 
1 can (7 oz.) tuna or chopped cooked chicken, 
2 cups cooked, drained macaroni, cooled 
1/2 cup diced celery, ¼ cup finely chopped onion. 
 
Blend mayonnaise, mustard, salt and pepper.  Mix with oranges, tuna or chicken & onion, stir gently. Keep chilled until ready to serve.

Egg Shrimp or Ham Spread---- Makes 2 cups 
 
1 package (8 oz.) cream cheese 
3 tbls. mayonnaise 
1/2 tsp. curry powder 
1 can (6 oz.) shrimp, drained or ½ cup left over chopped ham 
1 hard boiled egg, chopped 
1/4 cup chopped green  onions 
1 tbls. finely chopped celery 
 
Mix cream cheese with mayonnaise, curry powder; stir until smooth.  Press into shallow soup bowl. Mix thoroughly shrimp; or ham, egg, onions and celery.  Press mixture into cheese spread.  Sprinkle with paprika, Chill, serve with crackers.

Hot Fudge Pudding (good served warm or cold with cool whip or ice cream) 
This is different, easy, will give you 6-8 servings.  Butter a 9 inch pan or glass  dish, deeper than a pie dish 
 
1 cup all-purpose flour 
1 ¼ cups sugar (divided) 
6 ½ tbls. cocoa (divided) 
¼ tsp. salt 
1/2 cup milk 
2 tbls. melted butter 
1 tsp. vanilla 
1/2 cup light brown sugar 
1 cup cold water 
 
Batter:  Sift flour, baking powder, 1 ½ tbls cocoa, salt and scant ¾ cup sugar.  Stir in milk, melted butter and vanilla.  Pour into pan. 
Topping:  Combine remaining sugars, and cocoa, sprinkle over batter, pour cup of water over top 
Bake 350 D. 40-45 minutes.  Do not overcook. Texture will be cake with fudgie syrup. A surprise to see it bake that way.  Serve with vanilla ice cream, or cool whip.
