Microwave  Toffee

Easy, but watch mixture cooked in microwave closely after 6 minutes. Mixture should only be cooked until it is very light brown. Also be very careful as this mixture will be extremely hot.  After cooking 6 minutes in microwave if needed cook 1-3 min. longer, checking after each minute.

3/4 cup finely chopped pecans or walnuts
1/2 cup butter (1 stick)
1  cup sugar
1 scant tsp. salt
1/4 cup water
3/4  cup semisweet chocolate morsels

On greased cookie sheet sprinkle 1/2 cup nuts in middle of cookie sheet like a big circle.  Take a large glass 2 quart bowl, around the inside edge open stick of butter and grease bowl about two inches down. Place rest of butter in the bowl along with one cup sugar, salt and water.  Do not stir, microwave on high 6 minutes or just until light brown.  Very carefully pour hot mixture over nuts on cookie sheet, sprinkle with all of chocolate morsels, let set 1 minute, then spread chocolate and sprinkle remaining nuts on top.  Cool or chill until firm and break into pieces.  Yield one pound.  GOOD and EASY.

Sponge  Shortcake
       
Use greased glass or pan 8 x 8 x 2 -350 D  25-30 minutes.

In sifter:  1 cup flour
1 tsp. baking powder
1/4 tsp. salt

In medium large bowl put 2 eggs beaten with whisk, slowly add 1 cup
sugar beating as adding.  Add 2 Tbls. butter and tsp. vanilla. Add 1/2 cup hot milk alternately with flour mixture, whisk well.  Bake, cool and frost or put fresh fruit on top & or cool whip or ice cream.
This is a recipe I have had for years, is very simple and if whisked
well will be light and moist.

Quick Carmel Icing

1/2 cup butter (1 stick)
1/4 cup milk
1 cup light brown sugar
2 cups sifted confectioners sugar

Assemble ingredients and utensils.  In a large saucepan, melt butter
and brown, but do not burn.  Bring to boil for two minutes stirring constantly.  Add milk bring to boil again.  Cool to lukewarm, add sugar mix well and pour over cool cake, yield about 2 cups. If using on small cake, you could put remaining frosting on graham crackers single or one cracker on top like a sandwich.

Lemon-Apple  Coleslaw        Servings  6-8           

1 medium shredded cabbage
2 apples chopped
1-2 shredded carrots
1/3 cup mayonnaise
1 Tbls. sugar
2 Tbls. minced onion
1 tsp. grated lemon rind
2 Tbls. fresh lemon juice
1/4 tsp. salt and pepper

Combine cabbage, apples and carrots in large bowl.  Whisk together remaining ingredients, pour over cabbage, cover and chill.

Applesauce  Sweet  Potatoes
 
4 medium sweet potatoes
1 cup  unsweetened applesauce
2/3  cup firmly packed brown sugar
2 1/2 Tbls. butter melted
1/4 tsp. salt

Cook sweet potatoes in boiling water , cover and cook 30 minutes or until tender.  Let cool to touch, peel and slice 1/2 in thick. Arrange slices in lightly greased 11/2 qt. baking dish.  Combine applesauce and remaining ingredients, pour over potatoes. Bake uncovered 350 D. for 25 minutes.  Yield 6 servings
